Chicken Onion Sliders and Apple & Cranberry Coleslaw

Heya guys!

It’s October and every street is PURPLE! I’m loving it so much. Despite being bogged down by exams, the weather—when the sky doesn’t suddenly crack open—has been pretty good. And this makes me want to cook (eat?) and have throw downs similar to this one with my friends.

COLE SLAW INGREDIENTS

  • 3 tbsp plain yoghurt
  • 3 tbsp mayonnaise
  • 1 tbsp honey
  • 1 tsp apple cider vinegar (ACV)
  • Salt and pepper
  • ¼ head of cabbage finely chopped
  • 2 carrots grated
  • 2 onions finely sliced
  • ½ cup dried cranberries
  • ¼ cup walnuts
  • 2 large sliced pink lady apples

METHOD

1. In a bowl add the chopped veggies, cranberries and walnuts. Mix well.

2. In smaller bowl make the dressing using the yoghurt, mayo, honey, ACV, salt and pepper.

3. Pour over the slaw and toss to coat the veggies well.

Keep refrigerated until time to serve

4. Serve chilled.

Time: 10 minutes

Serving: 6-8


CHICKEN SLIDER INGREDIENTS:

  • 2 Chicken breasts (marinate in soy sauce, honey, lemon juice, fresh ginger and garlic, chillies and salt)
  • 2 large onions
  • 3 tbsp butter
  • Cheddar cheese slices
  • Slider buns
  • Cooking oil

METHOD

1. Cook the chicken according to your preferences. Remove from the pan and set aside.

2. In another pan sauté the onions with the butter and a bit of olive oil until they are soft and translucent. Season with salt and pepper.

Optional: Spread mustard on one side of the bun

3. Assemble the slider in this order: lettuce, onions. chicken, cheese.

4. Serve with Spicy Waru

Time: 25 minutes

Serving: 5/10

 


SPICY WARU INGREDIENTS:

  • 8-10 small warus (potatoes)
  • Powdered Parmesan cheese
  • Garlic powder
  • Paprika
  • Chilli powder
  • Oregano
  • Lemon juice
  • Salt and pepper

METHOD

1. Mix the spices together with the powdered Parmesan and sprinkle on freshly made fries then squeeze a little lemon juice over it.

Time: 10 minutes

Serving: 6
