Banana Chocolate Chip Oat Cookies

Heya guys!

Greetings from quarantine! 19873 days later and I hope we all still have our sanity in check? Great! Then you deserve to reward yourself with some delicious cookies.

A lot of people, myself included, have been making more banana dishes than usual lately. I think it might be something to do with quarantine that just makes people want to bake some banana bread. Well, if that isn’t your thing, here’s a recipe for banana chocolate chip oat cookies that’s ought to give you your banana fix. It’s pretty straight forward. The cookies are a bit of a cross between banana bread and a biscuit.


Banana Chocolate Chip Oat Cookies

Serving: 21-24 Cookies

Preparation Time: 10 Minutes

Baking Time: 15 Minutes

Ingredients:

  • 1 1/4 cups all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 tsp bi-carbonate of soda
  • 1 heaped Tbsp chia seeds (optional: I love the crunchy texture it brings to the cookie, plus extra health benefits)
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 cup rolled oats
  • 1/3 cup butter softened (about 2 heaped Tbsp)
  • 1 egg
  • 1 tsp vanilla essence
  • 3 medium-sized / 2 large overripe bananas
  • 1 cup chocolate chips (you can substitute with raisins)
  • 1/8 cup chopped walnuts (optional)

Method:

1. Preheat oven to 180 degrees Celsius for ten minutes.
2. Mix all dry ingredients together in a bowl (except the chocolate chips and walnuts)
3. Cream butter and sugar together then whisk in the egg, vanilla essence and mashed bananas.
4. Fold in dry flour mixture into wet ingredients.
5. Fold in chocolate chips and walnuts. (I usually leave out some chocolate chips to place on the top to get that nice choc chip-looking exterior)

7. Place cookies on two baking trays lined with parchment paper. Place trays in the oven to bake for 10-15 minutes.
8. Allow cookies to cool completely once out of the oven.
9. Enjoy with ice cream! Or at breakfast with some piping hot coffee/tea.
10. Cookies can stay fresh if refrigerated for up to a week.
