No exaggeration here but this has to be the tastiest dish we’ve done on #cookingwithCICI so far! And of course, it’s pretty easy to make. The meatballs are so tender they melt in your mouth. I can assure you that everybody will be asking for seconds once they’ve had a bite of this. So what are you waiting for? Pick up your phone and head to the kitchen right now! Prep time: 10 minutes
Cook time: 35 minutes
For the meatballs:
Ingredients:
- 350g beef mince
- 8 pork sausages
- 1 tsp garlic powder
- ½ tsp all spice/mixed spices
- 1 tsp salt and pepper
- 2 tsp Worcestershire sauce
- 1 cup breadcrumbs
- I egg
For the Hawaiian glaze:
Ingredients:
- 1 cup fresh pineapple finely diced
- ¼ cup soy sauce
- ¾ cup sugar [reduce according to your preferred taste]
- 1 tsp honey
- 2 tsp apple cider vinegar
- 1 tsp grated ginger
- ½ tsp ground cinnamon
- ¼ tsp ground nutmeg
- 1/8 cup or 3 tbsp sesame seeds [we put ours in the oven for 5 minutes under low heat to brown them but one can also fry them to achieve the same effect]
- 2 tbsp corn flour
- 1 cup water
Method for the meatballs:
1. Preheat the oven.
2. In a bowl, put the minced meat and sausage meat [make sure you remove the sausage meat from its ‘skin’ first]
3. Add the dry spices and Worcestershire sauce and mix well.
4. Add the breadcrumbs then mix again.
5. Lastly add the egg and mix well until evenly distributed.
6. Using a tablespoon, take one large scoop at a time of the minced meat mixture and roll into balls then arrange them on a baking tray lined with aluminium foil.
7. Bake at 180°c for 35 minutes.
Method for the Hawaiian glaze:
1. In a small saucepan put all the ingredients to cook on medium heat except the cup of water, sesame seeds and corn flour.
2. Bring it to a boil for around 5 minutes, stirring occasionally.
3. In the cup of water mix the corn flour well and pour into the pan, stir.
4. A minute before you are done cooking the glaze add the lightly toasted sesame seeds, stir in well then remove from the cooker.
5. Serve with your preferred choice of vegetable rice.

September 29, 2016Is there a way to not make all that sauce like if I only want it to coat the meatballs? Cause from the above photos it seems like there was excess.I think I’ll try this next week.

September 29, 2016@Melanie I think the only way would be to reduce everything to at least a half…that is, the ingredients for the glaze. Especially the sesame seeds. However generally, the extra glaze came in handy since it made the rice less dry and complimented it really well.
